Introducing our dish of the day: “Sliced Swordtip Squid with Karasumi (salted mullet roe) Sauce” 🥢

This dish features the fresh seasonal swordtip squid, marinated in a special sauce and mixed with the flavor of the salted mullet roe, which creates a harmony of sea saltiness and umami in your mouth. The crispy texture of the accompanying ice plant and the subtle saltiness also make for a perfect combination

Now, let us introduce “Tsubasa,” a Junmai Daiginjo sake from Hanenya brewery. It has a delicate, transparent aroma that reminds you of a gentle apple. The light and refreshing taste of the sake spreads smoothly in your mouth. The fruity sweetness with 50% rice polishing ratio is perfect to enjoy in a wine glass
